Mexican Pockets

Ingredients (Serves 8)


🌾 400g Plain Flour (White Wings)

🥛 400g Greek Yoghurt Plain Non-Fat (Chobani)

💪 20g Uvolve Mix-In Collagen Protein

🥩 500g 5% Fat Extra Lean Mince Beef (Coles)

🧅 100g Onions (raw)

🍅 150g Tomatoes (red, raw)

✨ 1 tsp Smoked Paprika

🧀 80g Light Tasty Shredded Cheese (Coles)

🌶️ 30g Jalapeños

🥫 420g Coles Mexican Style Chilli Beans

🌿 1 tsp Cajun Seasoning (salt-free)

🧂 Salt & Pepper – to taste


Directions

  1. Prepare the Filling

    Heat a non-stick frying pan over medium heat. Add the mince and onion, cooking until browned.

  2. Combine Flavours

    Stir in the beans, tomatoes, paprika, Cajun seasoning, salt, and pepper. Cook 5–7 minutes until fragrant and well combined. Set aside to cool slightly.

  3. Make the Dough

    In a large bowl, combine flour, Greek yoghurt, and collagen protein. Mix with floured hands until a dough forms. If sticky, add a little extra flour. Shape into a large ball on a floured board.

  4. Fill & Wrap

    Place a spoonful of the mince mixture in the centre of each dough round. Top with cheese and jalapeños. Fold and pinch edges to form a sealed pocket.

  5. Cook

    Place pockets seam-side down in a frying pan. Cook until golden, then flip to cook the other side. For extra crunch, transfer to the air fryer at 180°C for 3–4 minutes.
